So fast and easy for the low-carb dieter! This recipe comes from the South Beach Diet book that I have tweeked to our personal taste. You'll never miss the old waffle mix ever again! Ingredients:
1 cup old-fashioned oatmeal |
1/2 cup low fat cottage cheese |
4 whole eggs |
2 teaspoons vanilla |
2 tablespoons wheat germ (optional) |
Directions:
1. Process all ingredients in blender until smooth. 2. Heat waffle iron and spray with non-stick spray. 3. Pour desired amount on waffle iron. 4. Leave on longer for extra crispy waffle. |
