Low Carb Veggie Quesadilla |

This is a good lunch for people watching their carbs. Ingredients:
1 (6 inch) low-carb tortillas |
1/4 cup sharp cheddar cheese, shredded (any flavor) |
1/2 tablespoon tomato, diced |
1/2 tablespoon onion, diced |
1/2 tablespoon bell pepper, diced |
1/2 tablespoon mushroom, diced (optional) |
1 tablespoon taco sauce |
cooking spray |
Directions:
1. Lightly spray a small frying pan with cooking spray. 2. Cook the diced vegetables in the pan for about 3 minutes. Remove from the heat & add the taco sauce. 3. Lightly spray another small frying pan with cooking spray. 4. Place the tortilla shell into the pan. Put a thin layer of cheese on half of the tortilla. 5. Scatter the vegetable mixture over top of the cheese. Add another thin layer of cheese then fold over the tortilla. 6. Cook on both sides until slightly brown. Cut into half & serve hot. |
