1 (6 ounce) can chunk solid white tuna packed in water, drained |
1/2 cup celery, chopped into 1/4-inch chunks (about 1/2 stalk) |
1/2 cup water-packed artichoke hearts, drained and chopped into pieces |
1/4 cup real mayonnaise |
1/4 cup toasted pine nuts |
1 tablespoon fresh lemon juice |
1 teaspoon italian seasoning |
1 dash hot pepper sauce |
1/2 teaspoon salt |
1 pinch fresh black pepper |
4 medium tomatoes, top 1/2-inch removed, insides scooped out and discarded (about baseball size) |
1/2 cup shredded mozzarella cheese |
Directions:
1. In a bowl, mix tuna, celery, artichoke pieces, mayo, pine nuts, lemon juice, italian seasonings, hot pepper sauce, salt and pepper. 2. Stuff each tomato with tuna salad and arrange tomatoes in a microwave safe dish. 3. Preheat broiler. 4. Microwave on high for 4 min or until filling is hot. 5. Remove tomatoes from microwave and top each with shredded cheese, and slide under the broiler for 3 min or until cheese is melted and bubbling. |
