Very low in carbs, from Atkin's diet cookbook. Ingredients:
3 1/2 lbs roast |
1/2 teaspoon garlic powder |
1 teaspoon salt |
pepper |
3 tomatoes, quartered |
2 onions, sliced |
2 garlic cloves |
Directions:
1. Rub seasonings into the roast and chill 30 minutes. 2. Puree tomatoes, onions and garlic in processor. 3. Place roast and pureed sauce in a large pot and simmer 1-1/2 hours. 4. Turn roast and simmer an additional 1-1/2 hours. 5. Slice and serve with sauce. |
