Minestrone recipe without pasta and 1 can of beans.
Ingredients:
1/4 cup light italian dressing
1 large onion, chopped
2 green bell peppers, chopped
1 cup celery, chopped
3 cups frozen vegetables
28 oz diced tomatoes, canned
14 oz red kidney beans, canned
12 oz frozen spinach
6 cups chicken broth
1 garlic, pepper, basil and oregano to taste
Directions:
1. Saute chopped onion, bell pepper, celery and frozen vegetables (thawed) in dressing until tender.
2. Add canned tomatoes and beans, broth, seasonings and spinach (thawed) and simmer.
