Minestrone recipe without pasta and 1 can of beans. Ingredients:
1/4 cup light italian dressing |
1 large onion, chopped |
2 green bell peppers, chopped |
1 cup celery, chopped |
3 cups frozen vegetables |
28 oz diced tomatoes, canned |
14 oz red kidney beans, canned |
12 oz frozen spinach |
6 cups chicken broth |
1 garlic, pepper, basil and oregano to taste |
Directions:
1. Saute chopped onion, bell pepper, celery and frozen vegetables (thawed) in dressing until tender. 2. Add canned tomatoes and beans, broth, seasonings and spinach (thawed) and simmer. |
