Just a simple, low carb meatloaf. Ingredients:
1 lb lean ground beef |
1/2 cup medium white onion |
1/2 cup red bell pepper |
1/4 cup rao's marinara sauce |
2 extra large eggs |
1/4 cup progresso italian style breadcrumbs |
1/4 cup parmesan cheese |
1/4 cup flat-leaf italian parsley |
1 tablespoon oregano |
1/2 tablespoon salt |
1/4 tablespoon fresh ground black pepper |
2 tablespoons reduced sugar ketchup |
Directions:
1. Mix it all together and bake in a 374 degree oven for 1 hour or until a meat thermometer reads 160 degrees. |
