                    This recipe is a result of my friend's no-carb diet...& we basically just pulled out everything from the fridge that he can eat and made lettuce wraps from it. I thought they turned out surprisingly well so I wanted to share! Ingredients: 
                    
                        
                                                1/2 lb lean ground turkey  |  
                                                1 zucchini  |  
                                                1 (8 ounce) can sliced water chestnuts  |  
                                                1/4 cp. soy sauce  |  
                                                2 tablespoons parmesan cheese  |  
                                                1 head butter lettuce  |  
                                                1/4 cp. salsa  |  
                                                olive oil or grapeseed oil  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. finely chop your zucchini and water chestnuts & set aside. 2. wash butter lettuce. 3. combine turkey, parmesan cheese, & salsa in a bowl. 4. once combined, brown turkey slightly. 5. add zucchini and chestnuts, also soy sauce. 6. {it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}. 7. once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}. 8. And - that's it! Easy, quick, healthy & yummy! I top mine off with a little more salsa {Los Pastores is my favorite!}.                              |
