Low Carb Broiled Eggplant Ingredients:
1 eggplant |
4 tbsp olive oil |
8 oz mozzarella, part skim milk cheese |
8 oz cottage cheese, fat free |
8 oz ricotta cheese, part skim milk |
24 oz tomato sauce |
1 large egg |
Directions:
1. Slice Egglplant 2. Drizzle with olive oil and broil 3. Line pan 4. cover with cheese mixture and sauce 5. bake at 375 for an hour |
