Low Carb Chocolate Mousse |

I was desperately wanting somthing sweet while on atkins. this has a real grown-up taste, and satisfied my must have dessert craving. Ingredients:
16 ounces ricotta cheese |
2 ounces cream cheese (preferably whipped, or softened) |
1/2 cup splenda sugar substitute |
1/4-1/3 cup heavy whipping cream |
2 tablespoons cocoa |
2 tablespoons sugar-free chocolate syrup |
1 teaspoon vanilla extract |
1/2 teaspoon cinnamon |
1/4 cup chopped toasted nuts, of choice |
Directions:
1. Process cheeses and cream with hand mixer for 1-2 minutes, until smooth. 2. Add splenda, cocoa, vanilla, chocolate syrup, and cinnamon. 3. Process until smooth and creamy. 4. Spoon into 6 dessert cups and garnish with nuts. 5. *could add 2 tablespoons peanut butter for variation. 6. *could make super mousse-y by whipping half the cream separately and folding it inches. |
