I replace pasta with different sliced courgettes for instance if you use a potato peeler on pasta you get great thin slices which have to be cooked for less than a minute in this case replaced penne with zucchini again Ingredients:
1 zucchini |
1 bacon (unsmoked) |
1/2 cup mushrooms |
1/4 cup fresh basil |
5 cherry tomatoes |
1/2 teaspoon garlic |
1/2 teaspoon fresh parmesan cheese |
Directions:
1. cut your courgette into half lengthways then again three times again lenghtways on each half - then cut diagonally to get penne sized and shaped pieces and place in pan of water cold. turn on the heat to high (boil for two minutes)and when cooked drain and serve straight into a bowl 2. slice bacon in to 1cm slices (i prefer back bacon), slice mushrooms, half the cherry tomatoes and tear the basil up and fling all into a hot pan with the garlic cook stirring for approximatley 8mins until the bacon is cooked and the tomatoes have started to disintigrate. 3. Pour the sauce over the al dente penne and grate approx half teaspoon of fresh parmesan over the top |
