I love the Low Carb Diet. It seems like I can eat more. This one here is delicious! Ingredients:
5 eggs |
2 cups cheddar cheese |
1 cup swiss cheese |
1/2 white onion |
1/4 teaspoons salt |
1/8 teaspoons pepper |
2 tablespoons olive oil |
10 ounce frozen spinach |
optional ingredients |
8 ounce(s) bacon |
1/4 cup(s) green chili |
Directions:
1. Preheat oven to 350 2. Brown Bacon then Crumble 3. Finely chop onion & garlic 4. Saute onion & garlic in olive oil over med-high heat until golden 5. add spinach and lightly salt. 6. cook until all moisture is evaporated. 7. In mixing bowl beat eggs with fork add all ingredients. 8. Spray 9inch pie pan with non stick cooking spray 9. Pour mixture into pie pan 10. Bake for 30min or until brown and firm. 11. Allow to cool for 10min cut into 8 servings |
