Low Calorie Shrimp Thai Soup |

I love Thai food but wanted a low calorie soup that did not use Coconut Milk. This has great flavor without the fat. When I have them I add fresh ginger slices and Kafir lime leaves for more flavor. I like my food with heat so I use dried chilis too. Ingredients:
6 cups chicken stock |
8 oz mushrooms |
1 tbsp onion powder |
4 cloves chopped garlic |
1 tbsp fish sauce |
2 oz rice noodles |
4 oz raw shrimp |
1/2 cup chopped cucumbers |
2 eggs |
Directions:
1. Heat stock to simmer. 2. Add mushrooms, onion powder, chopped garlic, fish sauce and simmer gently for 20 minutes. 3. Add shrimp and noddles-continue to simmer until shrimp are cooked. Add cucumbers. 4. Beat eggs in small bowl. 5. Add eggs slowly-whisking constantly for 1 minute then serve. |
