Don't let the term low calorie fool you, this is awesome, very creamy and very delightful. Enjoy Ingredients:
2 envelopes plain gelatin |
6 tablespoons sugar |
1/4 teaspoon salt |
3 eggs separated |
1-1/2 cups skim milk |
1 teaspoon lemon rind grated |
3 cups creamed cottage cheese |
1 tablespoon lemon juice |
1 teaspoon vanilla |
6 tablespoons sugar |
1/3 cup graham cracker crumbs |
Directions:
1. Mix together gelatin, 6 tablespoons sugar and salt in top of double boiler. 2. Beat together egg yolks and milk then add to gelatin mixture. 3. Place over boiling water and cook stirring constantly for 7 minutes. 4. Remove from heat and stir in lemon rind then chill to unbeaten egg white consistency. 5. While mixture is chilling beat cottage cheese on high speed of electric mixer for 3 minutes. 6. Stir in lemon juice and vanilla then fold in gelatin mixture. 7. Beat egg whites until stiff but not dry then gradually add 6 tablespoons sugar and beat until stiff. 8. Fold gently into gelatin mixture then turn into spring form pan and sprinkle top with crumbs. 9. Chill until firm. |
