Low Calorie Broccoli Cheddar Soup

Delicious low calorie broccoli cheddar soup. Perfect for a cold, rainy day.
Ingredients:
1 medium white onion
3 cloves garlic
1 cup broccoli
1 large carrot
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red pepper flakes
1 lb frozen chopped broccoli
32 oz chicken stock
1 cup skim milk
1 1/2 tbsp corn starch
1/2 cup cheddar cheese
Directions:
1. Chop onion, garlic, fresh broccoli and carrot.
2. Sautee together for 3-5 minutes.
3. Add salt, pepper and red pepper flakes.
4. Add frozen broccoli. Sautee for 5 minutes.
5. Add chicken stock. Bring to boil and simmer for 20 minutes.
6. Mix together corn starch and skim milk.
7. Turn heat down and slowly stir in corn starch slurry.
8. Simmer for 5 more minutes.
9. Turn off heat. Add in cheddar cheese.
10. Blend until the soup reaches a creamy consistency.
