These are awesome! Low-Cal and vegetarian!! Ingredients:
3 tbl (fajita seasoning) |
3 tbl extra virgin olive oil |
1 green pepper |
1 medium zucchini |
1 large onion |
2/3 cup salsa |
1 teaspoon chili powder |
3/4 cup corn |
3/4 cup (black beans) |
1 cup shredded cheddar cheese |
2 cups mushrooms, portobella |
16 tbl (sour cream, fat free) |
8 flour tortillas, small |
Directions:
1. 1. Combine fajita mix, a little water, and 1/2 the oil in a medium mixing bowl. Add zucchini, onion, pepper, and mushrooms to marinade; stir to coat. Let stand at room temperature for 15 minutes. 2. 2. Preheat a large wok coated with cooking spray over medium heat. Add the rest of the oil, peppers, zucchini, mushrooms and onion; cook for 2 to 3 minutes, or until crisp-tender. Stir together salsa and chili powder. Add salsa mixture, corn, and beans to wok. Cook and stir for 1 to 2 minutes. 3. Place in flour tortilla with some shredded cheese and fat free sour cream! |
