This is a very light cucumber salad that I started making about 20 years ago, when I first started worrying about calories ha! Sometimes I sub. a vadalia onion when in season. I don't remember where I got this recipe from, but I still make it. Ingredients:
2 cucumbers, peeled and thinly sliced |
1 sweet bermuda onion, diced |
1/8 teaspoon salt |
1/4 teaspoon pepper |
1 teaspoon honey |
1 cup wine vinegar |
Directions:
1. Combine all the ingredients in a 1 quart jar, close and shake well. Chill overnight. |
