Easy to prepare. These loverly little lemon shortbreads are dainty, and oh, so wonderful with a lemon filled center.. Little stars that shine on their own on a cookie tray during the holidays or just tea time. Read more
Ingredients:
3/4 cup cornstarch
5 tablespoons powdered sugar
1 cup flour
2 sticks butter
filling for indentation in cookie
1 teaspoon lemon juice
1 teaspoon almond extract
3 tablespoons unsalted butter, soft
1 cup powdered sugar, sifted
Directions:
1. Sift cornstarch, sugar and flour together
2. Blend in butter by hand
3. Pinch off a teaspoon of dough
4. Roll into a ball
5. Place on a lightly greased cookie sheet, (may use parchment)
6. Make INDENTATION in CENTER of cookie with thumb
7. Bake 15 minutes at 350 degrees
8. FILLING:
9. Mix the two flavorings in butter
10. Mix in powdered sugar
11. Fill the center of cookies, while hot, with a demitasse spoon
12. NOTE: Handle carefully until cool....may break easily
