Easy to prepare. These loverly little lemon shortbreads are dainty, and oh, so wonderful with a lemon filled center.. Little stars that shine on their own on a cookie tray during the holidays or just tea time. Read more Ingredients:
3/4 cup cornstarch |
5 tablespoons powdered sugar |
1 cup flour |
2 sticks butter |
filling for indentation in cookie |
1 teaspoon lemon juice |
1 teaspoon almond extract |
3 tablespoons unsalted butter, soft |
1 cup powdered sugar, sifted |
Directions:
1. Sift cornstarch, sugar and flour together 2. Blend in butter by hand 3. Pinch off a teaspoon of dough 4. Roll into a ball 5. Place on a lightly greased cookie sheet, (may use parchment) 6. Make INDENTATION in CENTER of cookie with thumb 7. Bake 15 minutes at 350 degrees 8. FILLING: 9. Mix the two flavorings in butter 10. Mix in powdered sugar 11. Fill the center of cookies, while hot, with a demitasse spoon 12. NOTE: Handle carefully until cool....may break easily 13. LOVERLY! |
