Something like a pudding cake. This dessert comes out of the oven a lemon jelly topped with a nice brown crust. Ingredients:
1 cup sugar |
2 tablespoons flour |
pinch of salt |
2 egg yolks, beaten |
1 cup milk |
grated rind and juice of 1 lemon |
2 tablespoons butter, melted. |
2 egg whites, stiffly beaten |
Directions:
1. Sift together sugar, flour, and salt. 2. Stir in egg yolks. 3. Beat in milk, lemon rind and juice, and butter. 4. Fold in egg whites. 5. Pour into greased 8 pie plate or 1-quart baking dish. 6. Set pie plate or baking dish in pan of hot water(about halfway up sides of pie plate) and bake at 350 degrees F for 30 - 45 minutes. 7. Serve cold. 8.
