An easy way to utilize leftover meat, this meal tastes just as fresh as day one! Easy to prepare, and delicious. Ingredients:
leftover pork ribs, whatever amount you have on hand |
fresh green tomatoes, banana peppers, onion, parsley coarsely chopped |
1 cup orzo |
salt and pepper to taste |
dash powdered cinnamon stick |
3 tbsp olive oil |
Directions:
1. Combine the oil with a little salt in the pan 2. Heat over medium-low flame (I cook with propane gas in the house) 3. If you use an electric stove, keep the heat at medium to low as cooking progresses 4. Place the leftover ribs in the oven at LOW setting 5. Add the onions to the pan, and caramelize slightly. 6. In the meantime, cook the orzo in boiling water for only about 5 minutes. Orzo does not take long to cook. 7. When the onions are lightly caramelized, add all the remaining ingredients and simmer until soft and tender, about another 20 minutes. 8. This dish is both delicious, and economical. |
