Another great recipe from my friend Donna! Something different for us asparagus lovers. Cook time is chill time. (3hours) Ingredients:
1 12-once package frozen, cut michigan asparagus |
1 cup chopped, seeded tomatoes |
1/2 cup finely chopped onions |
1 garlic clove, minced |
2 tablespoons chopped fresh cilantro |
3 tablespoons finely chopped jalapenos |
1 5.5-ounce can tomato juice |
1 teaspoon salt |
1 teaspoon cider vinegar |
Directions:
1. Partially thaw Michigan Asparagus and chop. 2. Combine all ingredients. 3. Cover and chill thoroughly, about 3 hours. |
