These are a maple muffin recipe to die for!! I found it in a regional magazine called Saltscapes , So delicious!! Ingredients:
1/4 cup brown sugar, packed |
1/4 cup flour |
1 tablespoon soft butter |
1 1/4 cups all-purpose flour |
1/2 cup white sugar |
3/4 cup rolled oats |
1 teaspoon salt |
2 teaspoons baking powder |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/4 cup oil |
2 eggs, beaten |
1/2 cup milk |
1/2 cup pure maple syrup |
Directions:
1. TOPPING: Mix ingredients together in a small bowl until curmbly, and set aside. 2. MUFFINS: In a large bowl, mix together flour, sugar, rolled oats, salt, baking powder, cinnamon and nutmeg. 3. In another bowl, combine oil, eggs, milk and maple syrup. Add to flour mixture; mix just until moistened. 4. Fill greased muffin pans 3/4 full. Sprinkle topping over muffins. 5. Bake at 375F for 20 minutes, or until golden brown. |
