A co-worker's Norwegian Grandmother's recipe. A traditional Norwegian hash. Ingredients:
4 large potatoes, cut in chunks |
4 large carrots, sliced |
1 medium onion, chopped |
1 can corned beef |
Directions:
1. Boil potatoes, carrots and onion in water- until the potatoes split. 2. Pour off about 2/3 of the liquid into a bowl (if needed for later). 3. Add corned beef to pot. 4. With mixer, mix everything to the consistency of mashed potatoes. 5. (if too dry.. add more liquid) Season with salt and pepper. 6. (I also like ketchup). |
