Lots of Tomatoes Beef Stew |

Other than tomatoes, carrots, onions, and celery round out this nice seasoned stew. Ingredients:
2 lbs extra-lean beef stew meat, trimmed of fat |
5 -6 carrots, cut into 1 inch pieces |
1 large onion, cut in chunks |
3 celery ribs, sliced |
6 medium tomatoes, cut up and gently mashed |
1/2 cup cups quick-cooking tapioca |
1/2 teaspoon ground cloves |
1 teaspoon basil |
1/2 teaspoon dried oregano |
2 bay leaves |
2 teaspoons salt |
1/2 teaspoon black pepper |
4 potatoes, cubed |
Directions:
1. Place all ingredients in a slow cooker, and mix together well. 2. Cover, and cook on high 5 1/2- 6 hours. 3. If juices are too thin, add 2-3 tablespoons instant mashed potatoes. |
