Great for breakfast or brunch, and easier than an omlette - for me! Ingredients:
2t margarine |
1/2 med. onion, chopped |
1/2 red pepper, chopped |
1/2 tub fresh mushrooms, sliced |
1 small can sliced black olives, drained |
1-2 c shredded colby jack cheese |
1 tomato, chopped |
6-8 eggs |
2t. milk |
salt & pepper |
salsa |
sour cream |
Directions:
1. Melt margarine in large non-stick skillet 2. Add veggies and olives 3. While veggies are sauteing, whip eggs with milk in blender or bullet 4. When onion is translucent, pour eggs into pan and scramble 5. When eggs are almost done add cheese 6. Top each serving with chopped tomato 7. Garnish with sour cream and salsa |
