Really good. Cheap. Easy. Nice. Ingredients:
3 lbs chuck roast (cubed) |
seasoned flour (as needed) |
1/4 cup olive oil |
1/4 cup butter |
1/2 cup onion (minced) |
3/4 lb mushroom (sliced thin) |
1 1/2 cups beef broth (or good quality homemade strong chicken broth) |
3 tablespoons tomato paste |
2 teaspoons poultry seasoning |
1/2 teaspoon dry mustard |
1/2 teaspoon paprika |
Directions:
1. Heat oven 350. 2. Dredge beef in flour to coat. Shake off excess. 3. Heat oil and butter in a dutch oven. 4. Brown beef in batches, setting all aside. 5. To pan add onion. Saute 2 minutes. 6. Add mushrooms. Saute 5 minutes. 7. Return beef and accumulated juices. 8. Combine the broth, paste, seasoning, mustard and paprika. Stir into meat. 9. Cover. Bake 2 hours, stirring often and added more broth if needed. |
