WOW is all I have to say... Ingredients:
1 cup dried white bean |
1 tablespoon olive oil |
1 garlic clove (minced) |
1 shallot (minced) |
1 teaspoon thyme (minced) |
2 anchovies (rinsed, minced) |
1/2 cup fish stock |
1 lb fish fillet (any white, in chunks) |
1 cup seasoned flour |
1/4 cup olive oil |
1 green onion (minced) |
fresh thyme sprig |
Directions:
1. Soak beans 8 hours. 2. Drain. Place in a pot. Cover with water. Bring to a boil. Reduce. Cover. Simmer 1 hour. Drain. 3. In a skillet heat oil. 4. Add the garlic, shallots, thyme and anchovies. Saute 3 minutes. 5. Add broth and beans. Saute 3 more minutes. 6. Puree. Place in a saucepan. 7. Clean out skillet. 8. Dredge fish in flour to coat. 9. Heat oil in skillet. 10. Add fish. Saute until golden on both sides (sbout 3 minutes each). 11. Re-heat puree. Place on plates. Top with fish. Garnish with onions and thyme. 12. YUM! |
