Lori's Favorite Grape Leaves |

These are probably the same as the others, but I thought they were outstanding! Ingredients:
1 (20 ounce) jar grape leaves |
1 tablespoon olive oil |
1/2 lb ground beef |
1 onion (minced) |
1 small garlic clove (minced) |
1 cup water |
1/4 cup tomato sauce |
1/2 cup rice |
1 tablespoon mint (minced) |
1 tablespoon parsley (minced) |
1/4 teaspoon salt |
fresh cracked pepper (to taste) |
1 pinch ground cinnamon |
1/4 cup currants |
2 tablespoons pine nuts |
2 tablespoons port wine |
1 cup water |
1/2 a lemon, juice of |
lemon slice |
Directions:
1. Drain leaves. Separate. Soak to remove brine. 2. Dry on paper towels. 3. Heat oil in a skillet. 4. Add the beef, onion and garlic. Brown. 5. Add the water, tomato sauce, rice,. 6. mint, parsley, salt, pepper, cinnamon, currants, pine nuts and port. 7. Bring to a boil. Reduce. Cover. Simmer 15 minutes. 8. Let cool. 9. Remove stems from leaves. Place stem side up on counter. 10. Place 1-2 teaspoons of filling on each. 11. Fold in sides then roll up tightly. 12. Line the bottom of a large skillet with 4 of the leaves. Top with rolls, fitting them snuggly. 13. Add water and lemon juice. 14. Place a plate on top. 15. Bring to a boil. Reduce. Cover. Simmer 45 minutes. 16. Serve with lemon slices. |
