Very good recipe. Surprisingly easy, yet elegant... Ingredients:
3 lbs skinless chicken pieces |
salt & fresh ground pepper (to taste) |
2 tablespoons butter |
1 cup whiskey |
1/2 lb mushroom (sliced thin) |
1/4 cup leek (sliced thin) |
1/2 cup heavy cream |
2 tablespoons flour |
1 tablespoon lemon juice |
1 teaspoon whiskey |
Directions:
1. Rinse chicken. Pat dry. Season. 2. Heat butter in a large skillet. 3. Add chicken. Brown all over. 4. Add whiskey. Reduce. Cover. Simmer 30 minutes. 5. Remove chicken to a platter. Keep warm. 6. To pan add enough water to make 2/3 cup. 7. Add the mushrooms and leeks. Simmer 10 minutes. 8. Whisk in the cream, flour, lemon juice and whiskey. Simmer until thickened. 9. Return chicken to re-heat. |
