Good, rich comfort food! Ingredients:
2 lbs cod fish fillets |
1 bay leaf |
white wine, as needed |
1/2 bunch collard greens (shredded) |
8 potatoes (peeled, sliced thin) |
1/2 cup olive oil |
4 large onions (sliced thin) |
3 tomatoes (chopped) |
salt & fresh ground pepper (to taste) |
1/2 cup olive oil |
Directions:
1. Heat oven 350. 2. Place cod in a deep skillet. 3. Ad bay leaf. Cover with wine. Poach cod until just cooked. Drain. Flake. Set aside. 4. Boil potatoes and greens until tender. Drain. 5. Heat oil in a skillet. 6. Add onions. Saute 10 minutes or until golden. 7. Add tomatoes. Saute 5 minutes. Season. 8. In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers. 9. Pour oil over top. 10. Bake 1 hour. |
