Made this last week when we had several tomatoes on our vines. I combined what I liked best from several recipes, I couldn't find one that had everything I wanted. Bryan loved it...even ate some on his pizza! lol This was better the following day, next time I will plan to make the day before. Ingredients:
8 med-large ripe red tomatoes, chopped |
1/2 red onion, chopped |
1/2 white onion, chopped |
1/2 red pepper, chopped |
1/2 green pepper (or yellow) chopped |
2 jalepenos, seeded and chopped fine |
zest of 1 lime |
juice of 2 limes |
4 heaping forks chopped garlic |
salt |
small handfull fresh cilantro, chopped small |
Directions:
1. Add each ingredient to large mixing bowl as chopped 2. Stir together 3. Allow to sit in fridge several hours or overnight |
