Loris Chocolate Covered Cherry Brownies |

Needed an original Christmasy recipe for a marketing plan at work. I always think of chocolate covered cherries during the holidays, so, here is my version of a chocolate covered cherry brownie. The icing is very rich, I cut the recipe in half from what you see in the picture. Read more . It has the consistency and taste much like the insides of a chocolate covered cherry. All my testers loved them! Ingredients:
brownies |
1 box chewy fudge brownie mix prepared according to directions (2 eggs, 1/2 c water, 1/4 c oil usually) |
or your favorite homemade chewy fudge brownie (not a cake-like brownie) |
icing |
4 oz cream cheese, softened |
1 t margarine |
1/2 t vanilla |
1/2 lb box confections sugar |
1 small jar maraschino cherries, drained and chopped |
glaze |
1/2 c semi-sweet morsels |
2 t shortening |
*** you could also use crushed peppermint candies instead of maraschino cherries for a christmasy treat |
Directions:
1. Prepare brownies according to package directions 2. **Remember: a toothpick inserted in the center of fudgy brownies will not come out clean when they are done! Check your mix for doneness test, or, insert the toothpick 1 inch from edge** 3. Place pan on wire rack to cool 4. prepare icing 5. ICING 6. Cream together cream cheese, butter and vanilla 7. Gradually add in confectoners sugar until icing is smooth and creamy 8. Stir in cherries 9. Spread over cooled brownies and place in fridge 10. Prepare glaze 11. GLAZE 12. Melt together in microwave or top of double boiler, chips and shortening 13. Stir until smooth and shiny 14. Spoon into baggie 15. cut tip off of a corner, and pipe onto brownies 16. Chill about 10 minutes, until glaze hardens 17. Keep these brownies in the fridge |
