Wonderful and fun for All! Ingredients:
4 1/2 cups water |
1 1/2 teaspoons salt |
4 small coriander root |
2 large boneless skinless chicken breast halves |
1/4 cup canola oil |
3 tablespoons garlic (minced) |
2 cups rice |
lettuce leaf |
green onion (julienned) |
seedless cucumber (sliced thin) |
hot red chili pepper (minced) |
bean sprouts |
carrot (peeled, shredded) |
cilantro (minced) |
nuoc nam |
Directions:
1. Bring water to a boil. 2. Add the salt, coriander and chicken. 3. When water returns to a boil, reduce and simmer 15 minutes, skimming surface. 4. Remove chicken. 5. Set aside. 6. Strain broth. 7. Reserve. 8. Heat oil in pot. 9. Add garlic. 10. Saute 30 seconds. 11. Add rice. 12. Cook 1 minute. 13. Add reserved stock. 14. Bring to a boil. 15. Reduce. 16. Cover. 17. Simmer 15 minutes. 18. When done, mold rice onto a platter. 19. Slice chicken. 20. Place around rice. 21. Have each person wrap rice and chicken in lettuce with the remaining garnishes. |
