The marinade for the chicken makes the difference in these great tasting fajitas. The veggies are also cooked in spices that make a this recipe a tasty combination. Ingredients:
2 whole chicken breasts |
1/2 cup fresh lime juice |
1/4 cup olive oil |
salt and pepper |
3 tablespoons fresh cilantro |
3 cloves garlic, minced |
grilled chicken breast, sliced |
2 bell peppers, sliced |
1 large onion, sliced |
1 1/2 teaspoons worcestershire sauce |
1 dash tabasco sauce |
1 dash lemon juice |
1 teaspoon cumin |
2 cloves garlic, minced |
1 teaspoon salt |
1/4 cup olive oil |
Directions:
1. Marinate chicken 3 to 4 hours and then grill chicken till done. 2. Let chicken sit while preparing vegetables, then slice chicken. 3. In skillet, cook peppers, onions, spices, Worcestershire sauce and Tabasco in oil. 4. Cook till tender crisp. 5. Add sliced chicken into vegetable mixture and simmer 3 to 4 minutes. 6. Serve with flour tortillas and your favorite fajita fillings. |
