My mom made this stew in the winter a lot when I was growing up. Perfect with a nice crusty roll. Ingredients:
2 lbs. stew meat trimmed of fat |
5 c. water |
3/4 c. flour |
1/4 c. ketchup |
1/4 c. chili sauce (i can only find heinz brand) |
3 medium potatoes cubed |
4 stalks celery sliced |
2 medium onions chopped in large chunks |
2 carrots sliced |
3 tbsp dried minced onion |
2 bay leaves |
1 tsp kitchen bouquet |
1/2 tsp each: oregano, basil, and thyme |
1/4 tsp cayenne pepper |
couple dashes of tobasco (depending on your preference for heat) |
salt and pepper to taste |
Directions:
1. Mix flour, a little salt and pepper in a freezer or storage bag. 2. Add meat and shake to coat. 3. Brown meat in a large pot (Dutch oven). 4. Add water and remaining spices, the ketchup, chili sauce, tobasco and minced onion. 5. Simmer 1-2 hours until meat is tender. 6. Add veggies and cook another 30 minutes until tender. |
