My sister lori was the best in cooking italian cooking. Ingredients:
4 cups shredded mozzarella cheese, divided |
12 large manicotti |
2 cups ricotta cheese |
6 tablespoons chopped fresh basil |
1/2 cup grated parmesan cheese or 1/2 cup romano cheese |
1 (26 ounce) jar prepared spaghetti sauce, divided |
Directions:
1. Preheat oven to 350 degrees. 2. Spray a 13 x 9 inch baking dish with nonstick cooking spray. 3. Cook pasta according to package directions. 4. Drain; rinse with cool water. 5. Let pasta dry on paper towels. 6. For filling, in a medium bowl, stir together 3 cups of mozzarella with the ricotta and fresh basil. 7. Using a teaspoon. 8. carefully stuff pasta shells with prepared cheese mixture. 9. Spoon 2 cups spaghetti sauce into prepared baking dish. 10. Arrange stuffed pasta over sauce. 11. Pour remaining spaghetti sauce over the top of pasta. 12. Sprinkle with remaining mozzarella. 13. Bake manicotti for 15 minutes. 14. Sprinkle with the Parmesan, bake for 10 minutes longer. 15. Serve immediately. |
