My mom (Lorene) made this alot when I was little. It's easy, and so good. I love when my kids request me to make it. Ingredients:
3 eggs, beaten |
1 1/2 cups sugar |
1/2 cup butter, melted |
4 teaspoons lemon juice |
1 teaspoon vanilla |
1 1/2 cups coconut |
1 unbaked 9-inch pie crust |
Directions:
1. Combine the beaten eggs, sugar, melted butter, lemon juice and vanilla. Stir in the coconut. 2. Place pie crust in pie dish. Pour combined mixture into the pie crust. 3. Bake 40-45 minutes in preheated 350 oven. 4. Let cool and serve. |
