Lonnie's Mom's Barbecue Roast Beef |

This is one of those picnic/church supper things I picked up a long time ago. It slices well for Po-Boys. Lonnie lived in Louisiana. Ingredients:
4 lbs beef roast (eye of round is great) |
1 medium onion, chopped |
2 tablespoons vinegar |
1 tablespoon yellow mustard |
2 teaspoons sugar |
1 teaspoon dry hot mustard |
1 teaspoon chili powder |
1/2 teaspoon salt |
1/2 teaspoon sweet hungarian paprika |
1/2 teaspoon unseasoned meat tenderizer |
1 dash hot sauce (i use crystal) |
3/4 cup ketchup |
1/4 cup water |
Directions:
1. Put everything but the beef in a saucepan simmer 5 minutes or so and let cool. 2. Put cooled sauce and beef in a ZipLoc bag{she used a covered glass pan}in the fridge for 24 hours, turning occasionally. 3. Pat meat dry and brown/lightly sear in a little oil{use your roaster on the stovetop, save a wash}. 4. Pour sauce over, cover, and start in cold oven. 5. roast{covered} at 325F for 2 1/2-3 hours. 6. Serve hot or cold with sauce/drippings. |
