Long-Grain Rice With Feta, Pistachios, and Mint |

Ingredients:
2 tablespoons butter |
2 shallots, minced |
1 teaspoon salt |
1 cup uncooked long-grain rice |
1/4 cup crumbled feta cheese |
1/4 cup chopped pistachios |
3 tablespoons chopped fresh mint |
1/2 teaspoon lemon zest |
1/2 teaspoon pepper |
Directions:
1. Melt butter in a medium saucepan over medium-high heat. Add shallots, and sauté 1 minute. Stir in salt and 2 cups water; bring to a boil. Stir in rice; cover, reduce heat to low, and cook 20 minutes or until water is absorbed and rice is tender. Stir in feta cheese and next 4 ingredients. |
