This is from Alice Walters' The Art of Simple Food and I saw it recommended on a blog. Ingredients:
1 1/2 lbs broccoli |
6 tablespoons olive oil |
6 garlic cloves, sliced |
1 pinch dried red pepper flakes |
salt |
1 cup water |
1 lemon, juiced |
Directions:
1. Cut the florets off of the broccoli and chop into fairly small pieces. 2. Peel the stem and remove the hard, dry end. Cut the stem into thin slices. 3. Heat oil in a heavy-bottomed pot over medium heat. 4. Add broccoli, garlic, chile flakes, and salt. 5. Cook for a few minutes. 6. Add water and bring to a boil. 7. Reduce to a simmer. Cover and cook for about 1 hour, until very tender. 8. Stir briskly, causing the broccoli to break apart. 9. Add the lemon juice (and more salt or oil if necessary). |
