Lone Star Jalapeno Potato Soup |

This is a delicious soup. Potatoes, creamy, spicy, just so good, especially when it is cold weather. Serve with a hearty bread, and it will warm your bones . :) Ingredients:
1 medium onion, chopped |
1/4 cup unsalted butter |
5 pounds russet potatoes, peeled and cubed |
8 cups chicken broth |
1 teaspon ground cumin |
1/4 to 1/2 cup coarsely chopped pickled jalapenos and juice |
pinch of baking soda to prevent curdling |
4 cups evaporated milk |
salt and pepper to taste |
may garnish with sour cream and chopped green onions |
Directions:
1. In a large stockpot, saute onion in butter until just tender 2. Add potatoes, chicken broth, and cumin 3. Cover pot and cook until potatoes are tender, about 20-30 minutes 4. When done, add jalapenos, soda , evaporated milk 5. Coarsely mash potatoes with a potato masher 6. Stir well, add salt, pepper to taste 7. Simmer for about 15 minutes, stirring frequently 8. Garnish with a dollop of sour cream and chopped green onions |
