I have had this unique recipe for years. It's really good and may be used as a dessert or appetizer. it is somewhat weet but the flavors of the cheese and beer go really well A drizzle of balsamic vinegar and fresh trawberry ies make a nice garnish too Ingredients:
pastry crust if desired or buttered and dusted with graham cracker crumbs ( which i use ) |
4, 8 oz pkg cream cheese |
1 cup sharp cheddar cheese very finely grated |
1 3/4 cup sugar |
1/2 tsp vanilla |
1/2 tsp lemon zest |
1/2 tsp orange zest |
4 whole eggs, plus 2 egg yolks |
1/4 cup beer |
1/4 cup heavy cream |
Directions:
1. Cream the cream cheese smooth and fluffly 2. Combine the sugar, vanilla, lemon and orange zest and beat smooth into cream cheese 3. Add the eggs and yolks 1 at a time, beat only to blend 4. Stir in the beer and cream 5. Pour mixture into a pastry crust 9 inch springform or graham cracker crumb l dusted pan 6. Bake in a preheated oven 400F about 10 to 12 mins or top is light brown 7. Reduce heat to 250F and bake until cake is firm, about 2 hours ( less time is needed if pastry crust is omitted ) 8. Cool on wire rack 9. remove sides and chill cake very well |
