A sweet cake from the island of Sifnos. Ingredients:
2 lbs butternut squash (or pumpkin, peeled and diced into 1/2 inch cubes) |
zest of two orange |
1 cup orange juice |
1 cup olive oil |
1 cup sugar |
1/4 cup brandy |
1 teaspoon cinnamon |
1/2 teaspoon ground cloves |
2 teaspoons baking powder |
2 tablespoons honey |
2 cups raisins |
1 lb all-purpose flour (approximately 3 1/2 cups) |
1/2 cup sesame seeds |
Directions:
1. Preheat the oven to 350°F. 2. Grease the sides and bottom of a round pan about 16 in diameter. 3. Combine all the ingredients, except the sesame seeds, in a large mixing bowl and mix well. 4. Pour the mixture into the pan and smooth with a spatula. 5. Sprinkle with sesame seeds. 6. Bake in the oven for about 1 hour or until golden brown. Cool before serving. |
