My mom used to make these when I was growing up. Every time I make them I get requests for the recipe, which is a bit embarrassing as they are so simple! I have hesitated to post the recipe, as now my secret will be out, but these are just too good to keep to myself. Enjoy! Ingredients:
1/2 lb softened butter (smart balance is fine) |
1 cup packed brown sugar |
1 beaten egg (egg white product works just as well) |
1 teaspoon vanilla |
2 cups flour |
1 egg |
1 cup brown sugar |
1 cup chopped pecans |
Directions:
1. Cream butter with brown sugar. 2. Add egg and vanilla. 3. Mix well, then gradually work in flour. 4. Spread mixture in ungreased 9 x13 pan. 5. Brush with 1 beaten egg or 1/4 cup egg beaters. 6. Sprinkle with 1 cup brown sugar and 1 cup chopped pecans. I have also made with walnuts and macadamias, but prefer pecans. 7. Bake at 350 degrees (or convection at 333 degrees) for 20-25 minutes, until well browned and set. |
