Lolabuster Creamy Veggie Rice |

This is a great side dish all your veggies and starches together perfect with any meat for a complete meal. Ingredients:
2 tablespoons butter |
2 tablespoons olive oil |
1/2 medium onion, diced |
1 zucchini, diced |
1 small red bell pepper, diced |
10 mushrooms, diced |
1 teaspoon salt |
1 teaspoon fresh pepper |
1 teaspoon creole seasoning |
1 cup long grain rice |
1 cup heavy cream |
1 cup water |
2 chicken bouillon cubes |
Directions:
1. In a large sauté pan melt your butter then add the EVOO and all the veggies and sauté until translucent and all veggies are soft. 2. Add the rice and sauté with veggies for 3 minutes stirring constantly. 3. Add the cream and water, and bouillon cubes. 4. Bring to a boil then reduce heat and cover cook till rice is cooked, 20 minutes approximately. |
