Ingredients:
2 cup(s) carrots cooked & mashed
1 cup(s) cracker crumbs crushed
1 cup(s) milk
3/4 cup(s) cheddar cheese grated
1/2 stick(s) butter melted
1 small onion chopped
3 eggs slightly beaten
1/8 teaspoon(s) cayenne pepper
1 teaspoon(s) parsley chopped
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
Directions:
1. Heat oven to 350
2. Combine all ingredients but the eggs. Sightly beat the eggs and slowly add to the carrot mixture.
3. Pour into a well greased casserole dish and bake for 40-45 minutes.
4. Use mini carrots and cook in microwave.
5. /3 sleeve of Ritz crackers is perfect for cracker crumbs
6. Carrots and onion can be chopped in a food processor or chopped by hand.
7. If the recipe is doubled, cook for 55-60 minutes
8. Recipe can be prepared then frozen uncooked for several weeks
9. Be sure to defrost it before cooking
