The recipe that he took to competition... Ingredients:
10 egg yolks |
2 1/4 cups heavy cream |
3/4 cup milk |
1 pinch salt |
1/2 cup sugar |
2 whole vanilla beans |
1/2 cup sugar, for topping |
Directions:
1. split and scrape vanilla beans. 2. dump cream, milk, sugar, salt, vanilla beans, and insides into a medium saucepan. 3. cook over medium heat, whisking occasionally, for 10-15 minutes. 4. set aside to cool. 5. beat yolks until light. 6. temper cream into egg yolks till approximately half of the cream is in the yolks. 7. mix together. 8. ladle into 4-6 oz ramekins. 9. Place in deep baking dish with water to level of custard. 10. bake at 300 for 1 hour or until set. 11. cool and brulee. |
