This is a great chocolate cake! Why it's called log cabin, I don't have a clue, other than the fact that it may go back a long time. It's great and that's all that I care about! This is a large cake, so make sure you have the right pan/s for it. I don't really know what size pan to tell you to use. One look at the ingredients will tell you it's going to be huge. I plan to make this in the next week or so, and when I do, I'll come back and post. I hope you enjoy it. I got this recipe from my friend Donna, after having it at her house. Ingredients:
2 2/3 cups flour |
2/3 cup cocoa |
1 teaspoon salt |
2 teaspoons baking soda |
2 1/2 cups sugar |
1 cup vegetable oil |
2 cups coffee |
2 eggs |
2 teaspoons vanilla |
Directions:
1. Combine flour, cocoa, salt, baking soda and sugar. 2. Make a well in the center of the mixture. 3. Add the oil, coffee, eggs and vanilla. 4. Blend together.Beat until smooth. 5. Bake at 375°F for 1 hour. |
