Lobster Shortcakes -chive Biscuits |

This is a wonderful Lobster filling ( not really a salad ) placed between chive biscuits. If you don't want lobster well any other filling ( tuna chicken, etc ) would be great with these biscuits! Ingredients:
lobster filling |
2 cups cooked lobster meat |
1/2 cup mayonaisse |
1/4 cup milk |
1 tsp vinegar |
2 tbs fresh chopped chervil or tarrago |
biscuits |
2 cups flour |
2 tsp baking powder |
dash salt |
1/2 tsp cream of tarter |
2 tsp sugar |
1/2 cup shortening |
2 to 3 tbs fresh snipped chives |
2/3 cup cold milk or more as needed |
garnish |
pieces of lobster |
srrigs of chervil or tarragon |
Directions:
1. Lobster filling: 2. Cut lobster into chunks 3. Place mayo in a pan and heat with milk. Add vinegar and stir constantly 4. Simmer one minutes. Add lobster and let sit over low heat for 2 to 3 minutes 5. Remove from heat and cool. Stir in chervil or tarragon 6. To make biscuits: 7. Sift all dry ingrdients into a bowl 8. Cut in shortening till coarse crumbs 9. Mix in chives 10. Stir in milk and knead with fingers till dough sticks together 11. Gently pat dough onto a lightly floured surface 12. about 1/2 inch thick 13. Cut with 2 1/2 inch cutter 14. Bake 400- 10 to 12 minutes or lightly browned 15. makes 10 biscuits. 16. To serve: 17. Split 4 chive bisacuits in half 18. Top with 1/4 of lobster mixture saving a piece of lobster for garnish 19. Add the top biscuit to partially cover ssalad 20. Garnish with the saved pice of lobster and tarragon sprig |
