I absolutely love lobster salad but haven't had it since a trip to New England quite a few years ago. It is expensive to make but definately worth it. Here is a great and simple recipe I found in Country Inn cookbook. Read more . Enjoy! Ingredients:
1 1/4 pound freshly cooked lobster meat |
1/2 cup good mayonnaise |
1 tsp. grated orange rind |
1 tbl. fresh orange juice |
2 tsp. fresh lemon juice |
1/2 tsp. salt |
1/8 tsp. freshly ground black pepper |
1 tbl. drained capers |
4 cups mixed fresh salad greens |
1 tbl. chopped dill (optional) |
Directions:
1. You can start from scratch and cook your own lobster or you can ask your local fish market for some fresh cooked lobster. 2. Cut the lobster meat into bite-size pieces and place them in a bowl. Add the mayonnaise, orange rind, orange and lemon juices, salt, pepper, and capers. Toss gently to coat well. 3. Arrange 1 cup of salad greens on each of 4 plates. Scoop the lobster salad over the greens. Garnish with dill and serve. |
