A great treat for 2 people. I found this in the Chicago Tribune Swap Shop . Ingredients:
3 tablespoons mayonnaise |
2 teaspoons dijon mustard |
1 teaspoon fresh lemon juice |
1 1/2 lbs maine lobster tails |
1/4 teaspoon lemon pepper |
1/8 teaspoon salt |
1 teaspoon fresh lemon juice |
2 tablespoons butter |
2 hot dog buns, toasted |
1 cup shredded lettuce |
Directions:
1. Dressing: in a small bowl, combine mayonnaise, mustard and lemon juice; cover and refrigerate until needed. 2. Lobster roll: cut lobster tail in half and remove meat from the shell. Season the meat with lemon pepper, salt and lemon juice, then dot with butter. Broil lobster for 8-10 minutes, do not over cook. Cut grilled lobster into bite-size pieces. 3. Generously spread toasted buns with prepared dressing. Divide lettuce in half and place each portion on a bun. Top with lobster meat and serve immediately. |
